The hunt for the flavours of ‘the street’
Marcus Samuelsson is famed for his ability to create exciting and distinctive dishes that encapsulate the street food cultures of the globe. This summer, in a drive to spread Marcus’s enthusiasm, a competition on Facebook encouraged aspiring chefs across the country to share their own recipes that evoked memories of far-flung and exotic destinations in a competition to win the title of Best Street Food Chef.
Keen cooks from across Sweden sent in their entries, and recipes for Japanese rice balls, American salmon sandwiches and Colombian milk biscuits were among the mouth-watering contenders. The involvement of Sweden’s leading catering colleges, including the prestigious Stockholm International Restaurant School, added to the excitement of the competition. The winning recipe for Mexican Flautas (flute-shaped flour tortillas filled with chicken, tomato and mild cheese, and flavoured with garlic, coriander and lime juice), netted Sandra Torstensson from Malmö the prize of a trip to America including dinner with Marcus at one of his fashionable New York eateries.
